A Twist on Tuna/Chicken Salad Lunch Dish.

Today's lunch:

I've made this recipe for years; I love it.  Some people don't.
Would be a good gluten free lunch.

First dice some red onions (handful or 2) and soak them in rice vinegar (or whatever vinegar you like)
The use a can of canned tuna or chicken
add pinto beans or "organic salad beans" 
add a bit of mayo ( that smart heart stuff is recommended for a healthy heart)
Now, add your onions (I don't drain all of the vinegar but most of it).

Serve on a bed of crispy romaine lettuce and voila a low-fat healthy balanced lunch!
Full of flavor and FAST!
